When my child tells me he wants pasta with nothing, what does he really mean?
My four year old, Tom, doesn't like sauces lately. It's not that he wants plain pasta, he just doesn't want the sauce.
Maybe it’s something with the texture of the usual sauces that is less to his liking at the moment. Maybe it's too heavy for him, maybe he doesn’t like the seasoning, I don't know exactly. But I did decide to stop and check.
It turns out that he really likes pasta full of vegetables and peas. Plain pasta can actually be rich and yummy.

Wash the vegetables, peel the carrots. Cut the carrots into cubes, thinly slice the leek, chop the celery and cut the bok choy lengthwise.
Heat olive oil in a large pan and gradually add the vegetables and also the salt. Add the frozen peas and mix while cooking.
In the meantime, cook the pasta according to the preparation instructions on the package. Keep half a cup of the cooking water aside.
Add the pasta cooking water to the vegetables and remove from the stove.
Drain the pasta and add to the pan, mix and adjust seasoning as needed.
Serve immediately and add homemade vegan yogurt if you wish.
