When we travel with the children I always make sure to have as many snacks as possible.

What's important to me is that it’s possible to keep out of the fridge and are easy to grab and eat on the go.

Energy balls are a great way to keep the kids happy for a long time, and help us in many situations of long lines, delays or other unexpected events.

For this recipe I used the left over pulp from my homemade almond milk. You can of course change the flavors by replacing the almonds with other nuts, nut butter or tahini.

Ingredients

  • 0.5 cup almond pulp or flour
  • 0.25 cup oats
  • 2 tsp chia seeds
  • 0.25 cup peanut butter
  • 10 dates

Instructions

  1. Place the dates in a food processor, and pulse for about 1 minute.
  2. Add the almonds pulp, peanut butter, chia seeds and oats and pulse until sticky and smooth.
  3. Roll into small balls and place the rolled balls into an airtight container. If you wish cover the balls with coconut flakes.
  4. Keep in the freezer for up to 3 months.
