I love Matzo.
In my opinion, Matzo with almond butter and date syrup is about as good as it gets.
But 2 days into Passover and all I usually want is bread.
That's why I created this gluten-free pita bread!

Mix the buckwheat and quinoa flour, add the water and mix to a thick, pancake-like, batter.
Place a non-stick skillet over medium heat, and grease it with olive oil.
Using a ladle, pour the batter into the skillet and flatten like a pancake. Cook for about 1 minute and flip to the other side for another minute. Continue with the rest of the batter.
Optional additions: Chop some scallion and spread it over the pita bread before you flip it to the other side. Mix a spoonful of Zaatar with 1 spoon of olive oil and spread it over the pita bread after it's ready.
You can easily prepare the flours on your own - simply grind the quinoa and buckwheat to a fine powder, using a high-speed blender.
