"Breakfast is the most important meal of the day", is a well-worn classic phrase we all heard as children. But is it true?
Breakfast is the first meal of the day, and as its name suggests, we eat it in order to break our long overnight fast. Eating breakfast has been linked to metabolism improvement, better memory and concentration and higher energy levels.
Personally, I absolutely LOVE breakfast! It provides me with the energy to start my day and allows me to have some time for myself. On days that I don’t eat breakfast I get cranky, my digestion system is off, and I can even get disoriented or very unfocused.
This simple granola recipe is a healthy solution for the days you crave a sweet breakfast. We love to eat it with coconut yogurt, almond milk or an açaí smoothie bowl.
A friendly warning - when leaving the granola jar on the counter it tends to mysteriously disappear (or in our case, I highly suspect Guy just eats all the goodies).

Preheat the oven to 340°F (170°C).
In a large mixing bowl, combine the oats, chopped nuts, seeds and salt. Add the olive oil and sweetener of choice and give everything a good toss until it’s evenly mixed.
Spread the mixture on a baking sheet lined with parchment paper and create an even thin layer.
Bake for 15 minutes. Remove from the oven and give the mixture a thorough stir.
Reduce the heat to 300°F (150°C) and pop in the oven for an additional 5 minutes. Remove from the oven, mix thoroughly and place back in the oven for 5 minutes, keeping a close eye on the granola making sure it doesn’t burn.
Remove from the oven, mix in the chopped dates and pop in the oven for 1-2 minutes. Then remove the baking sheet from the oven and transfer it to a wire rack.
Let the granola cool down for about 20 minutes before serving / transferring it to an air-tight container.
Enjoy with almond milk / coconut yogurt or an açaí smoothie bowl.
